Lentil Soup with Pine Nuts

This dish is infused with green curry paste, ginger, turmeric, and a hint of harissa for a slight kick, all simmered together with creamy coconut milk and tangy tomatoes. Ingredients

For the Dahl

  • 1 cup red lentils, rinsed
  • 1 tablespoon olive oil 
  • 1 large onion, finely chopped
  • 6 cloves garlic, minced
  • 1 tablespoon green curry paste
  • 1 spoonful of turmeric
  • 1 cup of tomato sauce
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste
  • 1 teaspoon harissa (adjust to spice preference)
  • 3 cups of chicken broth
  • ¼ cup roasted Soha pine nuts

For the Garnish (optional)

  • Fresh chive, chopped
  • A squeeze of lime juice

Instructions

1. Cook the Lentils

Rinse the lentils under cold water until the water runs clear. In a large pot, bring 3 cups of chicken broth to a boil. Add the lentils, reduce heat to low, and simmer uncovered for 20-25 minutes, or until lentils are tender but still hold their shape.

2. Prepare the Dahl

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent. Add the minced garlic, ginger, and extra turmeric. Stir and cook for about 2 minutes until fragrant. Add the lentils and chicken broth. Bring to a boil, then reduce heat to low and simmer uncovered for 20-25 minutes, or until lentils are tender but still hold their shape. Towards the end of the cooking time, stir in the tomato sauce, coconut milk, and harissa. Continue to simmer for another 10 minutes, allowing the flavours to meld. Add salt and pepper to taste.

3. Roast the Soha Pine Nuts

In a dry skillet over medium heat, toast the Soha pine nuts until golden and fragrant, stirring frequently to prevent burning. This should take about 3-5 minutes.

4. Assemble the Soup

Sprinkle the roasted pine nuts over the dahl. If using, garnish with fresh chives and a squeeze of lime juice. Serve hot with naan, rice, or your choice of side.
