Ingredients
- 1 lb chicken thighs, cut into pieces
- 1 cup basmati rice
- 1/2 cup pine nuts
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp cinnamon
- 1 tsp allspice
- Salt and pepper to taste
- 3 cups chicken broth
Instructions
- In a skillet over medium-high heat, brown the chicken pieces on both sides. Remove and set aside.
- In the same skillet, sauté the onion and garlic until soft. Add spices and season with salt and pepper.
- Add rice and pine nuts and stir to coat well. Pour in chicken broth and nestle chicken pieces into rice.
- Bring to a boil then cover and simmer on low for 20 minutes.
- Remove lid and fluff rice with a fork before serving. Garnish with more pine nuts.
