Easy Chicken and Rice (Roz a Djej) with Pine Nuts

This classic Lebanese chicken and rice dish features the wonderful crunch and flavor of Lebanese pine nuts. Hand-collected in Lebanon, these premium nuts add a sweet, nutty taste and texture perfect for this recipe.

Ingredients

  • 1 lb chicken thighs, cut into pieces
  • 1 cup basmati rice
  • 1/2 cup pine nuts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cinnamon
  • 1 tsp allspice
  • Salt and pepper to taste
  • 3 cups chicken broth

Instructions

  1. In a skillet over medium-high heat, brown the chicken pieces on both sides. Remove and set aside.
  2. In the same skillet, sauté the onion and garlic until soft. Add spices and season with salt and pepper.
  3. Add rice and pine nuts and stir to coat well. Pour in chicken broth and nestle chicken pieces into rice.
  4. Bring to a boil then cover and simmer on low for 20 minutes.
  5. Remove lid and fluff rice with a fork before serving. Garnish with more pine nuts.
